Recipe: Oatmeal Chocolate Chip Pecan Cookies (using whole wheat pastry flour)
Desserts - Cookies, Brownies, BarsHi Glenda!
I've been looking for such recipes myself. I haven't tried this one, but it looks good to me. I think the secret is to use whole-wheat PASTRY flour. Regular WW flour might make a leaden cookie that doesn't rise well.
While I believe few cookies can actually be called "healthy", because of the amount of fat and sugar in them, this one is probably nutritionally better than most.
Let me know how they are if you try them.
OATMEAL CHOCOLATE CHIP PECAN COOKIES
1/2 cup (1 stick / 4 oz.) butter, softened
1/2 cup oil
1/2 cup brown sugar
1/2 cup white sugar
2 eggs
1 tsp. vanilla
1 1/2 cups whole wheat pastry flour
1 tsp. baking soda
1 tsp. salt
1/2 tsp. nutmeg
1/4 tsp. cinnamon
2 cups oats
8 to 10 oz. chocolate chips
1 to 2 cups pecans
Preheat oven to 375 degrees F. Lightly grease or parchment-line baking sheets.
In a mixing bowl, beat together butter, oil, brown and white sugars, eggs, and vanilla.
Sift together flour, baking soda, salt, nutmeg, and cinnamon. Stir into the butter mixture.
Stir in the oats, chocolate chips, and pecans. Drop by spoonfuls onto prepared sheets.
Bake at 375 degrees 10-12 minutes or until desired doneness.
