NOODLE, SAUERKRAUT AND SAUSAGE CASSEROLE
(Omit Sausage if Desired)
1 (8 ounce) package medium noodles
3 quarts (12 cups) salted, boiling water
Add noodles to boiling water and PARTIALLY cook for 5 minutes & drain.
While they are boiling, empty sauerkraut: ( regular can) or (as much as desired
from a jar) into a bowl, add 1 teaspoon sugar and 1/4 teaspoon caraway seed
& mix thoroughly.
Butter a casserole and place ALTERNATE LAYERS in it, of noodles and kraut.
End with a top layer of noodles.
Cut sausage (1 pound of sausage in casings), plain or seasoned, but WITHOUT
sage, into serving size pieces, prick with fork, and place on top. COVER
casserole with aluminum foil and bake at 350 degrees for 1 hour.
(NOTE: Oven time may be sped up if noodles are fully cooked and sausage
is browned on top of stove.)
