OATMEAL HAWAIIAN BREAD
4 eggs
1 1/2 cups sugar
2 1/2 cups flour
2 teaspoons baking soda
2 teaspoons salt
3 cups flaked coconut (10 ounces)
2 1/2 cups crushed pineapple, undrained (20 ounces)
1 1/2 cups uncooked oatmeal
Combine eggs and sugar, and beat until light (about 2 minutes). Set aside.
Sift together flour, baking soda and salt. Add to egg mixture and mix until smooth (about 3 minutes longer).
Add coconut, pineapple and oats; mix well. Spoon into 2 greased and floured (9-by-5-inch) loaf pans.
Bake 1 hour at 325 degrees F. Remove from pan immediately; serve warm or cold.
Freezes well.
Makes 2 (9x5-inch) loaves
