Recipe: Mock Corn Bread made with Cream of Wheat (Heloise, 1960's)

MOCK CORN BREAD MADE WITH CREAM OF WHEAT

Recipe is from Hints from Heloise column, 1968.

1 cup uncooked cream of wheat cereal
1 cup all purpose flour
1/4 cup granulated sugar
4 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1/4 cup cooking oil
10 drops yellow food coloring (optional)
1 egg, beaten

Preheat oven to 425 degrees F. Grease an 8x8-inch square baking pan (or use a non-stick pan).

Stir dry ingredients together. Mix in wet ingredients and beaten egg. Stir gently and don't over beat the mixture. Pour into prepared baking pan.

Bake until top is golden brown and a toothpick inserted in center comes out clean, about 20 to 30 minutes Top will be crisp and crunchy.
