Vanessa,.La. (10:44:37) : Stuffed Meat Loaf

2 eggs
2 t milk
1/4 c ketchup
1 1/2 t salt
1/8 t pepper
1 1/2 lb lean ground beef
Stuffing:
1/2 lb fresh mushrooms, sliced
1 med onion, chopped
2 T butter or margarine
2 cups soft bread crumbs
2 T chopped fresh parsley
1/2 t dried thyme
1/2 t salt
1/8 t pepper

In a large bowl, beat eggs, milk, ketchup, salt and pepper. beef and mix wee. Pat half of the meat mixture into a greased 9x5x3 in loaf pan; set aside. For stuffing, saut the mushrooms and onion in butter until tender, about 3 minutes. Add bread crumbs, parsley, thyme, salt pepper; saut until crumbs are lightly browned. Spoon over meat layer; cover with remaining meat mixture and press down gently. Bake at 350 degrees for1 hour or until no pink remains, draining fat when necessary. Yield 6 servings

Serves 4

Ingredients:
4 average-sized Pork Chops
2/3 cup Dr. Pepper
2/3 cup Ketchup
1 tsp. Worcestershire Sauce
1 tsp. dried Oregano

Pre-heat the oven to 400-F degrees.

Place the pork chops in a baking pan or glass casserole dish large enough so the sides of the chops are not touching.

In a small mixing bowl whisk together the Dr. Pepper, ketchup, Worcestershire sauce, and oregano. Pour the mixture over the chops.

Place the baking pan in the oven and bake for 20 to 25 minutes, or until the desired tenderness. Serve with a small amount of the juices over the meat.
