Recipe: OFF TOPIC: Cocoa Cola Cake with Cola Icing

Cocoa Cola "Cake"
From the White House Mansion Bed & Breakfast, Charlestown, Indiana

1 cup butter
2 cups flour
1 3/4 cups sugar
3 tablespoons cocoa
1 teaspoon soda
1 teaspoon vanilla
2 eggs
1/2 cup buttermilk
1 cup carbonated cola
1 1/2 cup miniature marshmallows

Combine all ingredients except cola and marshmallows in large bowl, blend at low speed then mix for 1 minute at medium speed. Add cola. Blend well. By hand, stir in marshmallows. Pour batter into greased 13" x 9" pan. Bake at 350 for 40-45 minutes. Cool 30 minutes then spread with Cola Icing (recipe below).

Cola Icing:

Combine 1/2 cup soft butter
3 tablespoons cocoa
1/3 cup cola
4 cups powdered sugar
Beat until smooth
Stir in 1 cup chopped toasted pecans or walnuts
