CINNAMON PECANS

2 egg whites
1 c. sugar
2 Tbsp. cinnamon
1/2 tsp. salt
1 lb. pecans

Beat egg whites foamy but not stiff. Stir in sugar,
cinnamon and salt. Stir in 1 pound pecan halves. Spread on greased cookie sheet. Bake at 250 degrees for 1 hour. Stir 3 or 4 times.

Spicy Glazed Pecans

1/4 cup sugar
1 1/2 tablespoons water
1/2 scant teaspoon salt
1/4 teaspoon cayenne pepper
1 cup pecan halves

Preheat oven to 350. Line a baking sheet with parchment paper, or use my very favorite liner, namely a silicone sheet that you cut to fit any sized pan that
you desire. You can use this liner almost forever, as it just sponges completely clean. Combine first 4 ingredients in heavy small saucepan. Stir over medium heat until sugar dissolves. Boil 2 minutes. Add pecans and stir until pecans are well coated with mixture, about 1 minute. Transfer pecans to prepared sheet, spreading evenly. I don't like them to touch. Bake until the pecans are beginning to brown, anywhere from 11 to 13 minutes. Transfer the cooked pecans to a parchment lined sheet and keep separate. Cool completely.

Turkey Alfredo Casserole

6 ounces fettucine or medium noodles -- cooked and drained
10 ounce package frozen broccoli cuts
3 tablespoons butter or margarine
3 tablespoons flour
1/2 teaspoon dried basil
1/4 teaspoon salt
1/8 teaspoon pepper
2 1/4 cups milk
2 1/4 cups chopped cooked chicken or turkey
1/2 cup parmesan cheese
1/4 cup parmesan cheese

Cook pasta according to package directions: drain and set aside. Run water over broccoli to thaw.

Sauce: In large saucepan, melt butter or margarine. Stir in flour, basil, salt, and pepper. Add milk all at once. cook and stir until thick and bubbly. Cook and stir one minute more. Remove from heat; Stir in turkey or chicken, 1/2 cup parmesan cheese, and well drained broccoli. Add pasta and toss to coat.

Place turkey mixture in greased 7 x 12 x 2 inch baking dish. Cover with foil. Bake at 350 degrees for 20 minutes. Remove foil. Sprinkle 1/4 cups parmesan chese. Bake, uncovered, for 5 to 10 minutes more or until heated through.

For the strudels:
1/2 cup fine dry bread crumbs
7 1/2 tablespoons unsalted butter
1 1/2 pounds tart apples, such as Granny Smith, peeled, quartered, and sliced thin crosswise
1/3 cup granulated sugar
1/2 cup raisins
1/2 teaspoon cinnamon
12 17-by-12-inch sheets of phyllo, stacked between two sheets of wax paper
and covered with a dampened kitchen towel
confectioners' sugar for dusting the strudels

For the whipped cream:
1 cup well-chilled heavy cream
1/4 cup sour cream
1/4 cup confectioners' sugar
1 teaspoon vanilla

Make the strudels:
In a small skillet cook the bread crumbs in 1 1/2 tablespoons of the butter over moderate heat, stirring, until they are golden and transfer them to a large bowl.

To the bread crumbs add the apples, the granulated sugar, the raisins, and the cinnamon and toss the mixture well. On a work surface arrange an18-inch-long-piece of wax paper with a long side facing you, cover it with 1 sheet of the phyllo, and brush the phyllo lightly with some of the remaining butter, melted.

Layer 5 more sheets of the phyllo over the first sheet in the same manner, brushing each sheet lightly with some of the melted butter, and mound half the apple mixture evenly along the long side facing you, leaving a 2-inch border at each end. Using the wax paper as a guide and rolling away from you, roll up the strudel tightly and, with the seam side down, fold the ends under to enclose the filling.

Transfer the strudel carefully to a lightly buttered jelly-roll pan and brush it withsome of the remaining melted butter. Make another strudel with the remaining phyllo, melted butter, and apple filling in the same manner and transfer it to the jelly-roll pan.

Bake the strudels in the middle of a
preheated 375 F. oven for 35 to 45 minutes, or until they are golden, and let them cool to warm in the pan on the rack. The strudels may be made 1 day in advanced and kept covered loosely at room temperature.

Reheat the strudels in a preheated 400 F. oven for 15 minutes. Transfer the strudels with slotted spatulas carefully to serving platters and dust them with the confectioners' sugar.

Yield: 6 servings

5 Egg yolks
3/4 c Sugar
2 c Milk
1 Piece vanilla bean
1 c Heavy cream
1/4 c Sugar
1 T Chopped marachino cherries
1 T Shredded candied orange peel
1 T Slivered blanched almonds

In a saucepan beat 5 egg yolks and 3/4 cup sugar until the mixture is thick
and pale in color. Stir in 2 cups milk, add a 1-inch piece of vanilla
bean, and cook over very low heat, stirring constantly, until the custard
is thick. Be careful not to let it boil. Discard the vanilla bean and
cool the custard. Turn it into a refrigerator tray and freeze it for about
2 hours, or until it is firm, but soft enough to be molded easily.

Whip 1 cup heavy cream until it is stiff, fold in 1/4 cup sugar and 1
tablespoon each of chopped marachino cherries, shredded candied orange
peel, and slivered blanched almonds and chill the mixture.

Chill a 1-quart jelly or spumoni mold and line the inside of the mold with
the frozen custard. Fill the center of the mold with the chilled whipped
cream mixture, cover the top of the mold with wax paper, and freeze the
spumoni without stirring.

2 cups confectioners' sugar
1/4 cup butter, softened
2 to 3 tablespoons milk
1 teaspoon vanilla
Food coloring
8 sugar ice cream cones (for body)
Small or large pretzel twists (for wings)
Chocolate or vanilla wafer cookies (for head)
Toasted coconut (for hair, see note)
Fruit-flavored ring-shaped candies (for halo)
Mini candy chocolate pieces, decorator candies or sprinkles, gels,
frostings, gum drops, etc.

In a small mixer bowl, combine sugar, butter, milk and vanilla. Beat at low
speed, scraping bow often, until fluffy, about 1 to 2 minutes. Tint frosting
as desired in pastel colors. Reserve some white or
yellow frosting for attaching heads, hair and face.

Place sugar cones upside down and frost. Attach pretzel twist (wings) to
cone with frosting.

Decorate angel body as desired with gels, frosting and candies. Let stand 5
to 10 minutes to set frosting.

For angel head, decorate wafer cookie, using frosting to attach eyes, nose
and mouth. Attach head to cone with frosting.

For hair, attach coconut with frosting. Let stand until frosting is set,
about 5 to 10 minutes. Attach fruit-flavored ring for halo. Makes 8 angels.

Note: To toast coconut, preheat oven to 350 F. Spread coconut in a shallow
pan. Bake, stirring often, for 7 to 10 minutes or until lightly browned.

1 pound ground beef, browned and drained
1 large jar spaghetti sauce
8 oz. bag pasta in cute shapes
12 oz. shredded mozzarella cheese

Brown the ground beef in a 10-inch skillet while the pasta cooks. If you like onion, put in a diced onion to brown with the beef. When it has cooked and been drained, add the spaghetti sauce. (We like the flavor of Prego.)
Drain the cooked pasta and put in a 10x13 pan. Top with meat sauce. Sprinkle cheese over all and bake at 350 for 15-20 minutes until the whole mess bubbles and looks good.
Serve with a fresh green salad or crunchy apple slices.
