Recipe(tried): Lemon Bread (1970's)

Breads - Muffins, Quick Breads
This bread is so moist and delicious. It tastes great with cream cheese and/or with orange marmalade.

LEMON BREAD

1/2 cup butter
1 cup sugar
2 eggs
1 1/2 cups sifted flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup milk
Juice and grated rind of one lemon

Beat butter and sugar. Beat in eggs.

Sift dry ingredients together and add to batter alternately with milk. Mix well. Stir in lemon juice and rind.

Bake in a greased 9x5 loaf pan in a 300 degree F oven for about 1 hour and 10 minutes, but check it after 1 hour. Remove to a rack to cool. Slice thin and serve at room temperature.

May be frosted with lemon glaze by mixing lemon juice with confectioner's sugar to a thin consistency.

Makes one loaf--Delicious!
