Recipe: One more for Amber

Just ran across this while surfing the copykat recipes, and thought of your "no cook" situation. Sounded pretty good to me. This is probably enough salad to serve 25 people on a big buffet.

Knotts Berry Farm Pea Salad

3 lbs. frozen peas, rinsed in hot water but not thawed
2 C. Sweet pickle chips, chopped
1 C. diced red bell peppers
2 C. diced celery
12 hard-boiled eggs, whites only, chopped -
(terrie's 2cents - maybe you can buy them
already cooked, or leave them out - and I'm
not sure what they have against the yolks so
you might want to just use 6 whole chopped
eggs)
1/2 C. finely chopped onions
1 C. cubed American cheese (terrie's 2cents
again - try and dice the same size as the
peas)
Dressing
4 C. mayonnaise
1/4 C. sugar
1/4 C. chopped sweet pickle chips
1 tablespoon diced red bell pepper

In a large bowl, combine salad ingredients. In a separate bowl mix dressing ingredients. Add to salad mixture and gently toss. Yield: 4 lbs
