Recipe(tried): Amber.... Creamsicle Pie, Diabetic Apple Pie, Broccoli Salad
Desserts - Pies and Tarts Have you gone to the pavillion? Does it have outlets for electricity? I know when we had a party at one it did. If so you could make use of crockpots as well. I have a great recipe for Italian hot beef sandwiches if you are interested. I also like the idea of party subs, or luncheon meat trays they are relatively easy to do w/ baskets of rolls is a great idea. Hamburgers, hot dogs, kebabs, is a great idea. Make lots of varietys of salads, potatoe, pasta, layer salads. A veggie tray is also easy to do. The large tubs was also a good idea. I have three recipes for diabetics, I realize one is an apple pie that needs to be baked, but possibly you could borrow an oven from a friend or family member? Feel free to post more requests for salads, the crockpot recipe, or any others you may need.
Creamsicle Pie
1 (8oz.) fat-free cream cheese
1 (16 oz.) Cool Whip , thawed
1 cup orange juice
1 (4-serving-size) sugar-free vanilla instant pudding
1 (4-serving-size) sugar-free orange Jello
2 reduced fat graham cracker crusts
Soften cream cheese, mix with thawed Cool Whip; blend till creamy; add orange juice and blend with mixer till real creamy. Sprinkle pudding in , blending well; add orange Jello, mix till well blended. Divide into two pie crusts; chill several hours before serving.
Exchange for diabetics: 1 1/2 bread/starch, 1 lean meat, 1/2 fat
Diabetic Apple Pie
Yield: 8 servings
2 Cans Sliced Apples Drained (Comstock)
2 ts Sweet 'n Low
1 ts Cinnamon
1/2 ts Nutmeg
1 tb Butter or margarine optional)
2 tb Flour
1 c Crushed Unsweetened Pineapple packed in Own juice. Do not Drain.
1 double Pie crust
Preheat oven to 425.
In large bowl combine apple slices and all ingredients except butter. Mix together. Pour into unbaked bottom crust.
Dot with butter. Top with vented or lattice crust. Bake for 15 minutes.
Reduce heat to 350 degrees and continue baking 25 to 35 minutes or until crust is golden brown.
Broccoli Salad
serves 10
10 cups fresh broccoli, chopped
1 cup raisins
4 Tbsp. chopped onion (I use red onion )
4Tbsp.Artifical bacon bits
Dressing:
10 Tbsp. fat-free mayonaisse
2 Tbsp. apple cider vinegar
2 packets Equal.
Mix salad ingredients together in a large mixing bowl. Mix the dressing ingredients in a small mixing bowl. Pour over the salad and mix well.
Exchange: 1 vegetable, 1/2 fruit per 1 cup serving.
