This is the original recipe that was on the package of marrow beans that my mother used to make way back. Still delicious today.
JACK RABBIT BAKED BEANS
1 lb. Jack Rabbit Marrow Beans
1 cup brown sugar
3 tbsp ketchup
2 tbsp molasses
2 tbsp bacon fat (I don't use this)
1 tsp. prepared mustard
1 tsp. salt
1/4 tsp. ground black pepper
1/4 tsp paprika
1/4 to 1/2 lb. salt pork (I will use bacon strips, sometimes)
Rinse and sort beans, cover with water and soak overnight.
The next day, rinse and drain, cover with water (to about 3-inches above the beans) and cook until tender. Drain beans, reserving some cooking water.
Mix the beans with the remaining ingredients, except salt pork and place in a casserole. Put salt pork or bacon on top.
Bake in a 325 degree F oven for 2 hours, add extra liquid (saved from cooking water) if needed.
