Recipe: Rice Pilaf (with peas, carrots, and mushrooms)

RICE PILAF

1 cup uncooked Riceland Rice
15 ounces chicken broth
1 cup frozen peas and carrots
1 (2.5 oz) can sliced mushrooms, drained
1/2 teaspoon salt
1/2 cup slivered almonds or pine nuts

In medium saucepan, bring rice, broth, vegetables and salt to a boil; cover and reduce heat to low. Simmer 20 minutes. Remove from heat.

Stir in nuts.

Servings: 4
