Shon, here are a couple ideas for dressing for your fruit salad.
The first is from my Mother-in-Law, well, the idea is, there is no exact recipe. We all thought she would be around forever so no one bothered to write down the recipe she used. We have never been able to duplicate it. She used canned fruit, (peaches & fruit cocktail), sliced bananas and colored mini marshmellows. She drained the canned fruit, reserving the juice in a saucepan, added cornstarch and cooked and stirred until it was thick. She used this as a dressing on the salad. Some family memebers think she may have added vanilla, but no one is sure. (I won't even mention the upsetting holiday season when someone added strawberries and everyone nearly fainted from the break with tradition!!)
My second idea is to use the orange glaze I use on my fruit pizza. Everytime I make fruit pizza we always have fruit left over, so we have a bit of fruit pizza salad. This consists of the leftover fruit, halved green grapes, sliced kiwi, mandarin orange segments, sliced bananas, halved strawberries and sliced peaches mixed with a bit of the glaze I use to top my pizza with. Here's the recipe:
Orange Glaze
1/2 cup granulated sugar
2 Tablespoons cornstarch
Dash of salt
1/2 cup water
1 cup orange juice
Combine ingredients in a saucepan and cook over medium heat. Bring to a boil and continue cooking two minutes. Let cool.
