Recipe: Lime Gelatin Salad (orange, pineapple and cream cheese, Taste of Home, 1995)

Salads - Fruit, Gelatin
LIME GELATIN SALAD

1 (6 ounce) package lime flavored gelatin
1 cup boiling water
1 (8 ounce) package cream cheese, softened
1/2 teaspoon vanilla extract
1 (15 ounce) can mandarin oranges, drained
1 (8 ounce) can crushed pineapple, drained
1 cup lemon-lime soda
1/2 cup pecans, chopped
1 (8 ounce) container Cool Whip, thawed, divided use

Dissolve gelatin in 1 cup boiling water.

In a mixing bowl, beat cream cheese until fluffy. Stir in gelatin mixture and beat until smooth.

Stir in remaining ingredients, except Cool Whip. Chill until mixture mounds slightly when dropped from a spoon.

Fold in three-fourths of the whipped topping. Pour into a 13x9x2-inch dish. Refrigerate for 3-4 hours or until firm.

Cut into squares; garnish with the remaining whipped topping.
