Recipe: Oven-Fried Salmon Steaks (using herb-seasoned stuffing and parmesan)

OVEN-FRIED SALMON STEAKS

1/2 cup oil
2 tbsp lemon juice
2 garlic cloves, minced, divided use
4 salmon steaks, 1 inch thick
1 cup crushed herb-seasoned stuffing
1/2 cup grated parmesan cheese
1/4 cup fresh chopped parsley

Combine oil, lemon juice, and half the garlic.

Place salmon steaks in shallow pan and pour oil mixture over. Cover and refrigerate 30 minutes, turning after 15 minutes.

WHEN READY TO COOK:
Preheat oven to 500 degrees F. Grease a baking dish that will hold salmon in a single layer. Remove salmon from marinade; set aside.

Combine stuffing, cheese, parsley and remaining garlic.

Dredge salmon in stuffing mixture. Place in greased baking dish. Sprinkle 2 tablespoons marinade over; discard remaining marinade.

Bake at 500 degrees F for 15 minutes.
