Recipe: Fruit Cake (using maraschino cherries, dates and chocolate chips)

FRUIT CAKE

This is a wonderful fruitcake recipe that is very different from most others that was given to me more than 20 years ago by an elderly German lady. Each Christmas I make them and give them for gifts. When people hear "fruitcake" they shudder... but when they eat mine...they just love it.

3/4 cup flour
3/4 cup sugar
1/2 teaspoon salt
1/2 teaspoon baking powder
3 cups chopped walnuts
1 cup drained maraschino cherries (I cut them in half)
1 (14 ounce) package pitted dates
1/2 cup chocolate chips
2 eggs, beaten until foamy

Preheat oven to 300 degrees F. Line two 7x3-inch loaf pans with wax paper. degrees.

Sift together flour, sugar, salt and baking powder into a large mixing bowl. Add walnuts, cherries, dates and chips and stir until fruit is well coated.

Add eggs and mix well. Divide into prepared loaf pans.

Bake at 300 degrees F degrees for 1 1/2 hours. When done, take out of pans, peel off paper, cool and wrap into foil Refrigerate.
