Recipe: Oyster recipes - Oysters with Shallots and Red Wine Vinegar, Oysters with Chilli, Ginger and Rice Wine Vinegar

Hi Carol, i've never eaten oysters i must admit - too cowardly to try them but i found a couple of ideas which i hope will help - they do look good. Good luck and enjoy

Oysters with Shallots and Red Wine Vinegar
Finely chop 1 peeled shallot and mix with 2 heaped teaspoons of sugar, 6 tablespoons of red wine vinegar and a little pepper. Allow to sit for 10 minutes. Serve in a dish with the oysters.

Oysters with Chilli, Ginger and Rice Wine Vinegar
Finely grate 1/2 a thumb-sized piece of peeled ginger and mix with 6 tablespoons of rice wine vinegar, 1 finely chopped and deseeded red chilli, and a little finely sliced fresh coriander. Stir in a teaspoon of sugar until dissolved. Serve in a dish with the oysters.
