Recipe(tried): Oyster Omelette
Appetizers and Snacks you got to be brave to try oysters as i know most americans don't like them! australians love their oysters very much so i used to make this while staying there. fresh oysters tatse so MUCH better than the ones in the jars (YUKS!) anyway, now i live in m'sia, i just buy this dish at hawker stalls. cost me less than 1 USD for 1 small serving. i like it extra hot and spicy (though i doubt you want to try that!)
ps: this is my old time fav. dish. so much so that i was nicknamed Oyster Omelette as a kid!

Oyster Omlette
Sweet potato flour is a must in this dish, if you find a recipe that suggests a replacement, don't even try it! Use flour from mainland China, if you could find them, they may look somewhat greyish instead of pure white and probably not as clean, it's much better than the processed white flour from other countries.
8 tbsp sweet potato flour
2 cups water
finely chopped garlic
dolops of (extra hot) chili paste (optional)
fresh baby oysters (to taste)
fish sauce
3 eggs
coriander leaves with about 2-inches of the stems intact
Dissolve flour in water. Fry garlic in oil till fragrant, stir and add mixture
(through a seive if the flour contains impurities).
When it's hardened and somewhat brown, add in eggs and scramble.
Splash in fish sauce (don't foget the sizzling part:-) ), last the oyster. The oyster need not be cooked.
Garnish with coriander and serve with extra garlic/chili sauce.
