Recipe: Pan de Monay

Monay sweet bread recipe

Starter: 1/2 ounce yeast (2 packets)
2 cups lukewarm water
7 cups bread flour
3/4 cup plus 2 tablespoons sugar

Dough:
1-3/4 cups bread flour
5 eggs
1/3 cup evaporated milk
1/2 teaspoon salt
1/3 cup grated Parmesan cheese
1/3 cup shortening

To make starter: Dissolve yeast in water. Add flour and sugar. Beat in a standing mixer, using dough hook, until a rough mass is formed, about 3 minutes. Cover with plastic wrap and let rise in a warm area until dough has doubled in size, about 1 hour. Return starter to mixer and continue mixing, slowly adding dough ingredients, beginning with flour and ending with shortening. Mix until well incorporated. Knead 6 to 8 minutes. Place in a lightly greased bowl, cover with plastic wrap and put in warm place to rise until double in size.
Punch down dough and refrigerate 1 hour.
Turn dough unto floured surface and form into 8 loaves of equal size. Place on sheet pans lined with parchment paper, and allow to rise and double in size again, 35 to 40 minutes.
Preheat oven to 350 degrees.
Brush with milk, and cut a slit into the top of each loaf.
Bake 30 minutes or until golden brown
