Recipe: Parfait Cake (using cake mix, Jell-O, and lemon extract)

PARFAIT CAKE

1 pkg. white cake mix (2-layer size)
4 eggs, beaten
2/3 cup water
1 (3 oz.) pkg. any flavor fruit gelatin mix
2/3 cup vegetable oil
1/2 tsp. lemon extract

Beat cake mix, eggs, and water together well. Add gelatin in its powder form, oil, and lemon extract. Blend thoroughly.

Bake in ungreased angel food tube pan at 375 degrees F for 1 hour. Let cool in pan face up. Do not invert. Save plain or iced.

The recipes Lu offered sound good! Please share them if you have a chance Lu. I'm posting this just in case it's close to the one you're looking for (using raspberry for the Jell-O flavor).
