REALLY SIMPLE SWEET RED PEPPER RELISH
2 large red bell peppers, roughly chopped
1 medium green bell pepper, roughly chopped
1 medium red onion, roughly chopped
1 celery stalk, roughly chopped
3/4 cup cider vinegar
1/4 cup plus 2 tablespoons sugar
Put roughly chopped red pepper, green pepper, onion and celery in food processor. Process (pulse) until the vegetables are coarsely chopped. Transfer to a colander and let drain for 10 minutes. Drained mixture should be 2 to 2 1/2 cups.
Combine vinegar and sugar in a medium saucepan. Bring to a boil over moderate heat and cook for 2 minutes.
Add the drained vegetables, return to boil and cook for 2 minutes.
Spoon into serving dishes or storage containers and let cool. Store in refrigerator.
Makes: 2 1/2 cups
