Recipe(tried): Pat how about Baked Catfish

Baked Catfish Parmesan

Olive oil,as needed
1 garlic clove, cut in half
1 egg lightly beaten[substitue 2 egg whites for whole egg
if desired, to reduce cholesterol]
1/4 cup milk
1/2 cup breadcrumbs
1/2 cup freshly grated Parmesan cheese
2 tbsp parsley flakes
1 1/2 tsp dried oregano leaves
3/4 tsp salt
1/2 tsp pepper
4 catfish fillets

Use olive oil to lightly oil a baking pan. Rub the cut side of the garlic into oiled pan. Combine egg and milk in a shallow dish. Combine breadcrumbs,
Parmesan cheese and seasoning in a seperate shallow dish. Dip each fillet into egg mixture, then roll in cheese mixture to coat completely. Put fillets on prepared pan, drizzle a small amount of olive oil on each fillet. Bake at 400oF
for 20 mons. or until fish flakes easily when tested with a fork. Serves four.

These can also be grilled by using foil on top to grate. I serve these over
rice and with a salad. Enjoy!
