BARBECUED THAI STYLE PRAWNS
24 large uncooked prawns
3 cloves garlic crushed
1/3 cup lime juice
1 red Thai chilli seeded chopped finely, divided use
1/4 cup coarsely chopped fresh coriander, divided use
Shell and devein prawns, leaving heads and tails intact. Combine prawns in large bowl with garlic, 2 tablespoons of the juice, half of the chilli and 1 tablespoon of the coriander, cover, stand 10 minutes.
Remove shrimp from marinade; set aside. Pour remaining marinade in a saucepan and boil 2-3 minutes; remove from heat and set aside.
Preheat grill.
Barbecue (or grill or char-grill) prawns until just changed in color.
Stir in chilli and coriander into the marinade. Serve prawns topped with marinade mixture.
