Recipe(tried): Peanut Butter Banana Quick Bread

I made these as muffins, and it made 18. I added a small amount of chocolate chips, which really jazzed them up.

Peanut Butter Banana Quick Bread

non-stick cooking spray
1 1/2 cups flour
3/4 cup sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 cup Skippy reduced fat creamy peanut butter
2 eggs
1 cup mashed ripe bananas

Preheat oven to 350F. Spray 9x5x3-inch loaf pan with cooking spray.

In small bowl combine flour, sugar, baking powder, baking soda and salt. In large bowl with mixer at medium speed beat peanut butter, eggs and bananas until smooth. With mixer at low speed beat in flour mixture. Pour into pan.

Bake 55 to 60 minutes or until toothpick inserted in center comes out clean. Cool in pan on wire rack 10 minutes. Remove from pan and cool completely. Makes 12 servings.
