Peanut Butter Bran Muffins

1 cup flour
1/3 cup packed brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1 egg, beaten
1 cup sour cream
3 tablespoons oil
1 cup bran cereal
1/2 cup chunky peanut butter
2 tablespoons honey

Preheat oven to 400 F; line muffin pan with paper liners. In a medium bowl, combine the flour, sugar, baking powder, salt and baking soda; set aside. In small bowl, mix the egg, sour cream and oil; stir in bran cereal and let stand 5 minutes. Add the peanut butter and honey, stirring to mix thoroughly. Stir the bran-peanut butter mix into flour mixture just until blended; do not overmix. Fill muffin cups 2/3 full. Bake for 20-25 minutes, or until tops spring back when lightly touched. Makes 12 muffins.
