Recipe: Peanut Butter Chocolate Balls

~*~ Peanut Butter Chocolate Balls OR Peanut Butter Snowballs ~*~

These are soooo easy to make and taste great!

2 cups confectioner's sugar (might need more)
1 cup creamy peanut butter
6 Tbsp. butter, softened (can use half butter & half shortening with good results)
1 to 2 tsp. vanilla extract if desired
2 pounds chocolate almond bark coating *OR* white confectionery coating

In a mixing bowl, combine sugar, peanut butter, butter, and if desired, the vanilla; mix well. Shape into 1-inch balls and place on a waxed paper-lined cookie sheet(s). Chill for 30 minutes or until firm (if you chill the balls in your freezer - like a deep chest freezer - it'll only take 10, 15 minutes or even less). Meanwhile, melt the coating of your choice in a double boiler or microwave-safe bowl. Dip balls in coating, and place on waxed paper to harden. Yield: 4 dozen.
