SPEEDY COUSCOUS SUPPER
2 cups couscous (or one 12 oz package), uncooked
2 cups diced, cooked lean chicken, ham, beef or extra-firm tofu
2 carrots, grated (or 1 small zucchini, chopped or 1 celery stalk, thinly sliced)
2 cups orange juice
1/4 cup chopped fresh basil (or 1 tsp dried) (optional)
2 green onions, minced (or 1/4 cup minced red onion)
1/2 tsp salt
1/2 tsp freshly ground black pepper
Place couscous, chicken and carrots in a large heatproof serving bowl.
Heat orange juice in a saucepan set over high heat or in a microwave until boiling. Stir into couscous. Cover tightly with a plate, a piece of foil or plastic wrap. Let stand for 5 minutes.
Sprinkle with basil, onion, salt and pepper. Stir gently until evenly mixed.
Makes 4 servings
