Recipe: Peanut Butter Sandies (cookies)

PEANUT BUTTER SANDIES

1/2 cup smooth peanut butter
1/2 cup vegetable oil
6 tbsp butter, softened
1 cup powdered sugar
1/2 cup brown sugar, packed
1 egg
1/2 tsp vanilla
2 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt

Preheat oven to 350 degrees F.

Combine peanut butter, oil, and butter. Beat until well blended. Add powdered sugar and brown sugar. Beat until fluffy and smooth. Beat in egg and vanilla. Stir in flour, baking powder, soda, and salt until thoroughly mixed. Drop on ungreased cookie sheets.

Bake 10-12 minutes.
