Recipe(tried): Pear in port wine
Misc. Pear in port wine (Poires au Porto)
Choose pretty pears with stems for this simple but striking dessert.
Serve 6
6 ripe, firm pears
2 cups ruby port wine
cup sugar
2 cups water
Peel the pears, but leave them whole. Core, leave the stem end intact, and cut off a think slice at the bottom so that the pears can stand upright. Bring the port, sugar and water to a boil in a nonreactive saucepan. Place the whole pears in the liquid, lower the heat, and simmer for about 35 minutes, turning the pears occasionally until hey are tender. Remove the pears with a slotted spoon and cool.
Reduce the liquid by boiling vigorously for about 10 minutes. Place the pears upright in a serving dish and spoon the syrup over them. Chill before serving.
