Recipe: Italian Pizza (Hunt's Tomato Paste, Let's Cook Italian)

FOR THE DOUGH:*
1 package active dry yeast
1 1/4 cups warm water
2 tablespoons cooking oil
1 teaspoon salt
4 cups flour
FOR THE PIZZA:
1 (6 oz.) can Hunt's Tomato Paste
1/2 cup hot water
1 teaspoon salt
1/8 teaspoon ground black pepper
1/2 teaspoon dried oregano or basil
Toppings: anchovies, mushrooms, pepperoni, salami, uncooked ground beef, chipped dried beef, sliced onions, chopped parsley
1 lb. mozzarella or Swiss cheese, sliced thin
Dissolve yeast in warm water. Stir in oil and salt. Mix in flour. Knead on floured board until smooth and elastic, about 15 minutes. Place in greased bowl and brush with oil. Cover and let rise until double in bulk, about 2 hours.
Knead lightly and divide into 4 parts. Roll into approximately 9-inch circles. Place in greased pie pans or on cookie sheets. Dent here and there with fingertips and turn up edge. Brush with oil.
Mix Hunt's Tomato Paste with water and seasonings. Spread over dough. Add your choice of toppings and dot with cheese.
Bake in hot oven (450 degrees F) 15 minutes or until dough is brown and crisp. Cut into wedges.
*You may substitute a packaged mix for the dough - Use 1 package hot roll mix, made according to label directions, or 4 cups biscuit mix, made as for rolled biscuits.
Makes 6 to 8 servings
