Peg your tomatoes sound great, i'm sure that they will be ideal for this recipe and much better than the shop bought ones! And Thyme too!! Don't forget though, that dried Thyme is alot more concentrated so if using fresh you'll probably have to use about 2 tbsp. I think fresh Thyme can only make it taste better!! And Carol, no problem, i hope you have a chance to try this one out as it is lovely at this time of year! What a shame Peg can't 'post' some of her tomatoes over the message board for us, huh?
