PENNE WITH CHUNKY KALAMATA OLIVE SAUCE

For easy olive pitting, press olives with the flat part of a chef's knife until flesh separates from pit. This sauce is also outstanding over baked chicken or grilled fish. (Better H & G)
1 (14 1/2 oz.) can diced tomatoes with peppers and onions
Nonstick cooking spray
1 large onion, finely chopped (about 1 cup.)
4 cloves garlic, minced
1 (7 oz.) jar roasted red peppers, drained and chopped (1 cup)
4 oz. penne pasta, uncooked
2 tsp. dried basil, crushed or 2 Tbsp. snipped fresh basil
1/3 cup coarsely chopped pitted kalamata olives
Drain tomatoes, reserving 1/4 cup of the juice; Set aside. Spray a saucepan with nonstick cooking spray. Cook and stir onion and garlic over medium heat for 5 mins. or until tender. Add tomatoes, reserved juice, peppers, and dried basil (if using.)
Bring mixture to boiling. Reduce heat and simmer, uncovered for 15 minutes or until most of the liquid has evaporated, stirring occasionally. Meanwhile prepare pasta according to pkg. directions.
Remove sauce from heat. Stir in olives and fresh basil (if using). Serve over pasta. Makes 5 servings.
