Recipe: The Victoria Cake (using cake mix, cream cheese, and mandarin oranges)

THE VICTORIA CAKE

1/2 cup coarsely chopped pecans
1 (8 ounce) package cream cheese, softened
1 (18 1/4 ounce) package lemon supreme cake mix
1/3 cup sugar
2 tablespoons flour
2/3 cup vegetable oil
4 large eggs
1 (11 ounce) can mandarin oranges, well-drained

Do not preheat oven. Spray a 12-cup Bundt pan with vegetable cooking spray. Sprinkle the nuts evenly over the bottom of the pan. Set aside.

In a large mixing bowl, cream the cream cheese 1 to 2 minutes until it is softened. Add cake mix, sugar, flour and oil, and beat with an electric mixer on low speed just to blend. Add eggs and blend well. Increase mixer speed to medium-high and beat for 2 minutes. Add drained oranges and beat on lowest speed 1 to 2 minutes until orange pieces are well-distributed.

Pour batter into prepared pan and set oven to 325 degrees.

Bake 45 to 50 minutes until a cake tester inserted in the middle of the cake comes out clean. Let cake cool in the pan. Invert onto a plate and serve.
