christie/alberta this is from Rose Levy Beranbaum's Cake Bible.
3 Tbsp. milk
3 Large eggs
1 1/2 tsp.vanilla
1 1/2 C.sifted cake flour(I've used reg. flour too)
3/4 C. sugar
3/4 tsp. baking powder
1/4 tsp. salt
13 Tbsp. softened unsalted butter
Preheat oven to 350 degrees
In a medium bowl combine the milk, eggs, and vanilla.
In a large mixing bowl combine the dry ingredients and mix on low speed to blend. Add the butter and 1/2 the egg mixture. Mix on low speed until the dry ingredients are moistened.Increase to med. speed for 1 minute.
Scrape down the sides and gradually add the remaining egg mixture in 2 batches, beating for 20 seconds after each addition to incorporate the ingredients. Scrape down the sides.
Scrape the batter into a prepared pan( buttered,wax-papered then floured) and smooth the top(will be 1/2 inch from the top of a 4 cup loaf pan).
Bake 55 to 65 minutes or until a tooth pick comes out clean. Let cool on rack for 10 minutes before removing from pan.
It is a great recipe from a great book.
