Title: RECIPE: PFEFFERNEUSSE (Iced Peppernuts)

Hi Jennifer,
Read you post, and was very touched that you would like to replicate some on "grandma's" favorites for her. I found this one in an international cookbook called: "The Wonderful World of Desserts" An International Sampler...by Favorite Recipes Press.
P.S. My best friend who is German/Irish makes these every Christmas...They are much better when "aged" a little..

PFEFFERNEUSSE (Iced Peppernuts)
1-1/2 cups honey
1/4 cup shortening
1 egg, beaten
4 cups sifted flour
l tsp. soda
l tsp. salt
l tsp. baking powder
l tsp. nutmeg
l tsp. allspice
l tsp. black pepper
3/4 tsp. cardamon
1/4 tsp. aniseed
Heat honey in large saucepan; do not boil. Remove from heat; add shortening. Let stand until cool. Beat in egg. Sift flour and all dry ingredients into honey mixture; mix well. Let rest for 30 minutes. Preheat oven to 350 degrees. Shape dough into 1 inch balls; place on lightly greased cookie sheet. Bake for 13-15 minutes or until golden brown. Place 12 warm cookies in a bowl. Add two tablespoons icing: stir until cookies are coated. Place on wire rack, and let stand until icing hardens. Store in airtight container. Yield: 8-9 dozen.

ICING FOR PEPPERNUTS
2 egg whites
l tablespoon honey
1/2 tsp. aniseed
1/4 tsp. cardamon
2 cups confectioners sugar
Blend egg whites, honey and spices in mixer bowl. Add confectioners sugar gradually, beating constantly until creamy.
P.S.
Jennifer, I don't know about using these "raw" egg whites, you may want to use
Wilton's "meringue" powder...Wal-Mart usually carries this, and probably the grocery store does too. But it definitely sounds "authentic", and something they may have done in the "old days"....
