CANDIED APPLE PIE
FOR THE PIE:
1 pkg refrigerated pie crust (for 2 crust pie), unbaked
3/4 cup granulated white sugar
1/4 cup all purpose flour
1/2 tsp ground cinnamon
1/8 tsp ground nutmeg
1/4 tsp salt
6 cups peeled, thinly sliced tart apples
2 tbsp butter
2 tbsp lemon juice
FOR THE CANDY TOPPING:
1/4 cup butter or margarine, melted
1/2 cup brown sugar
2 tbsp heavy (whipping) cream
1/2 cup chopped pecans
TO MAKE THE PIE:
Preheat oven to 400 degrees F.
Line a 9-inch pie plate with pastry; set aside.
Mix white sugar, flour, cinnamon, nutmeg, and salt in a large bowl. Add apples and toss to coat.
Spoon apple mixture into pastry-lined pie plate. Dot with 2 tablespoons butter, sprinkle with lemon juice.
Top pie with second pastry crust: seal edges, cut vents.
Bake at 400 degrees F for 40 minutes or until golden brown.
MEANWHILE, TO MAKE THE CANDY TOPPING:
Mix melted butter, brown sugar and heavy cream in a microwave safe measure. Microwave on medium for 2 minutes. Stir in pecans. Microwave on high for one minute.
Spoon candy topping over top of hot pie.
Bake in 400 degree F oven for 2 minutes longer. Serve warm.
