Hi Mary Jo,
Let me share with you something my kids love. It is a Mexican Style recipe but you can get everything in any market in the US.
Picadillo (ground beef)
2 lbs ground beef
2 medium size potatoes
2 carrots
1 can peas (optional)
3 medium size tomatoes finely chopped
1 small onion chopped
1/4 teaspoon minced garlic
Olive oil
Dried parsley
Salt and pepper to taste
Put the oil in a saucepan at medium temperature and add the onion until lightly brown. Then add the garlic and fry just before it gets brown, otherwise it will turn out bitter.
Add the tomatoes and season with salt and pepper to taste along with the some parsley leaves.
Let it cook a little while and then add the ground beef. Cover and leave until cooked.
In another saucepan, you can cook the potatoes cut in little pieces along with the carrots not until completely cooked, so you can then add them to the beef saucepan and finish cooking them there.
The peas are optional. You can add as much vegetables as you want.
