Recipe: Pigs In A Blanket (using breakfast link sausages, yeast dough)

2 1/4 tsp or 1 packet yeast
2 tbsp very warm water (95 to 105 degrees F)
5 to 5 1/2 cups flour
2 tbsp sugar
3 tsp baking powder
1 tsp baking soda
1 1/2 tsp salt
1 cup vegetable shortening
2 cups buttermilk
5 dozen link sausages, fried
Melted butter
Preheat oven to 400 degrees F.
Dissolve yeast in 2 tablespoons warm water.
Sift dry ingredients into a large bowl. Cut in shortening with pastry blender. Add buttermilk and yeast mixture. Stir until thoroughly moistened.
Turn dough onto floured board and knead 1 or 2 minutes. Roll dough out to 1/4 inch thickness and cut with 2 inch biscuit cutter.
Take a link sausage, that has already been fried, and wrap a biscuit around lapping over the top and tacking with a tooth pick.
Place on ungreased baking sheets. Brush with melted butter and bake at 400 degrees for 12-15 minutes or until lightly browned.
