Recipe: Pina Colada Salad with Marshmallow Creme

Jane, perhaps you could use this recipe as a base for your salad and experiment with more "tropical" ingredients. I use the Kroger Pina Colada Lite brand yogurt and blend the marshmallow creme with it first for easy mixing. I sort of came up with the marshmallow creme idea when it needed just a bit more sweetness and body. Good luck on your state fair entry and let us know what you decide.

Pina Colada Fruit Salad

1- 8oz. pina colada yogurt
1 cup marshmallow creme
1- 20 0z. can pinapple tidbits (drained)
1 lg. can mandarin oranges(drained)
1 cup minature marshmallows
1/2 - 1 cup coconut
chopped pecans (optional)
