Recipe: Pineapple Chicken (using chicken breast and peanuts)

PINEAPPLE CHICKEN

1 (8 1/4 ounce) can pineapple chunks, drained, reserve juice
1/4 cup pineapple juice, reserved
1/4 cup light soy sauce
2 tablespoons vinegar
1 tablespoon sugar
Cornstarch
2 chicken breasts, whole, boned, cut, julienne
1 egg white
1/4 cup peanut oil
1 tablespoon dried red pepper flakes
1 cup dry roasted peanuts
3 green onions, sliced (for garnish)
Hot cooked rice or noodles (for serving)

Mix pineapple juice with soy sauce, vinegar, sugar and 1 teaspoon cornstarch; combine well; set aside.

Mix chicken with egg white and 1 tablespoon cornstarch.

Heat oil; add pepper flakes; stir-fry 10 seconds. Add chicken and stir-fry until no longer pink.

Add pineapple and peanuts, then sauce. Cook, stirring 1 to 2 minutes until sauce is slightly thickened. Turn into serving dish and top with sliced onions.

Serve with rice or noodles.

Makes 4 servings
