Recipe(tried): Pineapple Fritters

Hi, here is the recipe for the pineapple fritters. We used to have a concession van that we drove to craft shows. The fritters were a big hit. There really isn't a recipe for the fritters, we made up our fritter recipe and by trial and error came up with this which is really tasty and addictive if your a pineapple lover! Pineapple Fritters

Large cans pineapple "rings"*
buttermilk pancake batter mix
vanilla
peanut oil for deep frying
powdered sugar or cinnamon sugar mixture

Drain pineapple well in a colander till all juice is drained. Heat peanut oil in a deep fryer till hot (must be hot or you will have greasy, soggy fritters).

Mix pancake batter, add 1/2 tsp. vanilla to every 2 cups of prepared batter.

Coat pineapple rings in prepared batter and deep fry till golden on each side (won't take long!) Drain on paper towels.

While still warm, sprinkle with powdered sugar or cinnamon sugar mixture (we liked the powdered sugar the best!)

*You may also use pineapple chunks, however, I think the rings are prettier and more unique.
