Recipe(tried): Pineapple Upside Down Cake...with NO butter or shortening!

My notes on this recipe say that my husband really liked this, that it was kinda like angel food cake-

UPSIDE DOWN CAKE

1/2 cup brown sugar
8 oz. pinneapple slices, packed in their own juice, drained
4 eggs, at room temperature, separated
1 cup sugar
1 cup flour
1 teaspoon vanilla

Preheat oven to 350. Spray a 9"x 9" pan or a 9" round cake pan with non-stick coating spray. Evenly sprinkle with brown sugar;top with pineapple slices. In a small bowl beat egg whites, gradually adding cup of the sugar until stiff peaks form. Set aside. In large bowl beat egg yolks with remaining cup sugar until thick and lemony-looking. Stir in flour until well blended. Fold in egg whites and vanilla. Spoon into prepared pan. Bake 30 min, until toothpick comes out clean. Immediately invert onto platter. Makes 8 servngs.
