Recipe: Pink Potato Salad (with red potatoes, beets and baby carrots)

PINK POTATO SALAD

"The beets and carrots give a great flavor to the traditional potato salad."

1/2 bag of small red potatoes (about 10-12)
1 bag small already peeled carrots (baby carrots)
2 to 3 small beets
6 eggs
1 medium onion, chopped
FOR THE SAUCE:
2 cups mayonnaise
Mustard
Sugar
Salt and pepper (to taste)

Boil potatoes, carrots and beets until tender. Hard boil eggs. Let all cool.

Peel potatoes and beets and cut into small pieces. Cut carrots and eggs into small pieces

Mix the ingredients for the sauce together and combine with vegetables.
