Recipe(tried): Pinwheel Cookie Recipes for: JOY/DENMARK

I'd be happy to share the Pinwheel cookie recipes
with you!

Date Pinwheels

Filling: 1 lb. (454 g) dates - chopped
1/2 cup white sugar
1/3 cup water
2/3 cup finely chopped walnuts

Simmer dates, sugar & water together
until mushy & thickened. Add a bit
more water if too dry.
Stir in nuts & cool

Cookie dough: 1 cup butter or margarine, softened
1 cup brown sugar, packed
1 cup white sugar
2 eggs
2 tsp. vanilla
3 1/2 cups flour
1 tsp. baking soda
1/2 tsp. salt

Cream butter with sugars. Beat in
eggs 1 at a time. Add vanilla.
Stir in flour, baking soda & salt.
Divide dough into 4 parts - roll
each part 1/4" thick, in rectangle
shape. Spread with date filling.
Roll up - wrap & chill overnight
Slice 1/4" thick. Put on greased
cookie sheet. Bake 375 degrees
for 8-10 minutes.
Makes about 8 dozen

Raspberry Pinwheels: Spread dough with a mixture
of 1 cup raspberry jam,
1 cup shredded coconut &
1/2 cup finely chopped nuts
(chill overnight)

Chocolate Pinwheels: Spread each rectangle of
dough with 1/2 cup melted
semi-sweet chocolate chips
(I use a chocolate-hazelnut
spread ex: Nutella)
It's delicious!
(chill overnight) - bring
to room temperature before
slicing - otherwise
chocolate is too hard
