Recipe: Scalloped Potatoes with Cheese and Ham (or Hot Dogs) (4 variations)
Main Dishes - CasserolesCHEESE SCALLOPED POTATOES AND HAM
1/2 cup chopped onions
1/4 cup butter
1/4 cup flour
1/2 tsp. dry mustard
1/2 tsp. salt
1/8 tsp. pepper
2 1/4 cups milk
1 cup shredded cheese
4 cups thinly sliced potatoes
1 lb. ham (2 cups), cut in large chunks
Cook onion in butter in large saucepan until onion is tender.
Stir in flour, dry mustard, salt and pepper. Gradually stir in milk. Cook and stir over medium heat until sauce thickens.
Add cheese and stir until cheese melts; remove from heat.
Arrange potato slices in greased 12x8x2-inch baking dish. Top with ham and pour sauce over all.
Cover with foil and bake in 350 degree F oven for 45 minutes. Uncover and bake 15 minutes longer.
Makes 4 servings

HAM AND POTATO BAKE (using sliced cooked potatoes)
2 tbsp. chopped onion
1/4 cup margarine
1/4 cup flour
1/2 tsp. dry mustard
1 tsp. salt
1 1/2 cups milk
2 cups shredded mild cheddar cheese, divided use
6 cups cooked potatoes, sliced, divided use
1/2 lb. ham, cut into 1/2 inch slices
Saute onion in margarine. Blend in flour, dry mustard and salt. Gradually add milk, stirring constantly until thickened. Add 1 1/2 cups cheese, stir until melted.
Toss potatoes in cheese sauce. Pour into 2 quart casserole; reserving 1 cup potato slices. Arrange ham and the reserved potato slices on top.
Bake at 350 degrees F for 30 minutes. Top with remaining cheese when done and continue baking until cheese is melted.
Makes 6 servings

SAVORY POTATO BAKE WITH HAM (using cubed cooked potatoes)
2 tbsp. margarine
2 tbsp. flour
1 tsp. dry mustard
2/3 cup milk
1 1/2 cups (6 oz.) shredded sharp Cheddar cheese
4 cups cubed cooked potatoes
1 1/2 cups chopped ham
1/4 cup sliced onion
Melt margarine in saucepan over low heat. Blend in flour and dry mustard. Gradually add milk, stirring constantly until thickened.
Add 1 cup cheese, stir until melted.
Stir in potatoes, meat and onion. Spoon into 1 1/2 quart casserole.
Bake at 350 degrees F for 30 minutes. Top with remaining cheese. Continue baking until cheese is melted.

PICNIC CASSEROLE (using cooked potatoes and hot dogs)
4 medium red potatoes, peeled, diced and cooked
1/4 cup butter or margarine
2 tbsp. minced onion
6 hot dogs, sliced
1 (10 3/4 oz.) can condensed cream of mushroom soup
1 cup frozen peas, thawed
1/2 cup milk
1 tbsp. prepared mustard
1/3 cup shredded sharp cheddar cheese
In a 2 quart casserole, toss potatoes, butter and onion.
In a medium bowl mix hot dogs, undiluted soup, peas, milk and mustard. Pour over potato mixture.
Bake for 40 minutes at 350 degrees. Top with cheese and place back in oven until cheese melted.
