Recipe: Pizza Bread (and Crust)
Pizza/Focaccia Pizza Bread (and Crust)
net.cooks/Dave Rosik (1982)
I just tried this one last night. I like it best if refrigerated
over night. From this batch I made one pizza crust and one small loaf of pizza bread.
1 14 cups warm water
2 tbls olive oil
2 tbls sugar
1 tsp salt
3 cups flour
1 pkg yeast
Put water in mixing bowl. Add yeast, sugar, salt, and oil. Stir.
Add 2 cups flour, mix to uniform consistency. Add 1 cup flour. Mix 'til a nice ball of dough forms (you may have to do a little kneading to get all the flour into it). Cover, let rise in warm place for about 45 minutes Smash down dough. Kneed. Divide into two equal balls. I used one ball for a crust and one for a loaf. Do what you want with them.
For the bread, flatten dough into pan-sized rectangle (so that it covers the bottom of a loaf pan ~ 1.5 ins thick). Mash down center to form a trough in the dough. Let rise for about 45 minutes After rising, cover top of loaf with pizza sauce, allow trough area to fill with sauce.
Bake at 350 degrees for 30 to 45 minutes Let cool. Slice. Eat. Think of how you'll improve it the next time.
For the crust. Spread thin layer of olive oil on baking pan.
Smash dough into pizza crust on pan, making the edge thicker if you like.
Let rise for about 40 minutes Bake in oven at 375 for about 20 minutes Put on pizza topping(s). Bake in oven at 425 for about 25 minutes Allow it to cool a few mins for the cheese to set after removing from oven.
