Recipe(tried): polish potatoe pancakes

potato pancakes

3 eggs
6 med. potatoes, pared andsliced
2 lg. sprigs of parsley
6 tbl. of flour
1/4 ts. baking powder
1 ts. salt optional

put first 4items in afood prossesor or blender
pulse until potatos and onions are cut up fine but not
entirely pureed.
using a griddle or hot skillet with nonstick spray
or alittle cooking solid oii.
pour a small amount about a 1/4 cup for each pancakes spread with back of spoon. cook until top is firm.
flip cooking until golden brown.
please put a small amount of spray or oil after
each batch.
serves 6 people
serve with applesauce or sryup.
