Recipe: Pancakes for a Crowd, Homemade Pancake Syrup, and Oven Fried Bacon (serves 100)
Breakfast and BrunchPANCAKES FOR A CROWD
"13 lbs. of pancake mix will serve 100 or make your own pancakes"
9 lb flour
4 3/4 cups dry non fat powdered milk
3/4 lb white sugar
8 oz baking powder
4 1/2 tbsp. salt
35 eggs
1 1/2 gallons water
2 cups melted shortening (or vegetable oil)
Cook on a griddle. Temperature 375 degrees F
Mix together dry ingredients, combining well to distribute evenly.
Add eggs and water and mix at low speed just until blended. Don't mix excessively.
Blend in oil or melted shortening, mixing about 1 minute
Using a 1/4 cup measure or ladle, pour onto lightly greased hot griddle. Cook until top is covered with bubbles and underside is browned, turn, cook on the other side.
2 pancakes per serving
SERVES 100 (for 300 repeat the recipe 3 times)

HOMEMADE PANCAKE SYRUP
2 quarts (8 cups water)
1 1/2 oz corn starch
6 lb brown sugar
1/4 tsp. salt
1 1/3 tbsp. mapline flavoring
Combine first 4 ingredients. Bring to a boil, reduce to a simmer and cook 10 minutes or until thickened.
Remove from heat and stir in flavoring. Syrup will thicken further upon cooling.
This allows 2 Tbsp. per serving.
Serves 100 (for 300 repeat 3 times)

OVEN FRIED BACON
18 lb sliced bacon
Preheat oven to 375 degrees F. For a convection oven use 325 degrees F.
Arrange slices in rows, across pan with fat edges slightly overlapping lean edges.
Bake in preheated oven without turning 20-25 minutes until bacon is slightly crisp. DO NOT OVERCOOK.
Drain or skim off excess fat at needed. Drain thoroughly on paper towels.
Allows 3 slices per serving (reduce bacon by 6 lbs. for 2 slices per person)
Serves 100 (for 300 repeat 3 times)
