Recipe: Polynesian Chicken (using chicken breasts, pineapple and bell pepper)

1 package (about 1 1/2 pounds) Foster Farms chicken half breasts
1/4 cup reduced sodium soy sauce
2 tablespoons brown sugar
1 tablespoon lemon juice
2 teaspoons cornstarch
1/2 teaspoon ground ginger
1 clove garlic, finely chopped
1 (15 1/4 ounce) can pineapple chunks, drained, juice reserved
2 tablespoons vegetable oil
3 green onions, cut into 1-inch pieces
1 red bell pepper, cut into 1-inch pieces
Hot cooked rice (for serving)
Rinse chicken; pat dry.
In medium bowl, combine soy sauce, brown sugar, lemon juice, cornstarch, ginger, garlic and 1/4 cup reserved pineapple juice. Add chicken; marinate at least 30 minutes.
Drain; reserve marinade.
In large skillet, heat oil over medium heat, add chicken; cover and cook 7 to 10 minutes on each side.
Add onions, pepper, pineapple chunks and 1/2 cup reserved marinade, discard remaining marinade. Cook 5 minutes more or until chicken is no longer pink when cut into.
Serve with hot rice.
