Recipe(tried): Pork and Cabbage Stew

Delicious Pork and Cabbage Stew

1 to 1.5 pounds boneless pork chops or pork loin or boneless contry ribs
2 medium onions
1 small green cabbage
1 lb bag carrots
1 28 oz. can diced tomatoes
2 liter bottle of Pepsi Cola
1/2 cup pineapple juice (or crushed pineapple in can)
1.25 cups extra long grained enriched white rice
1 small chicken boullion cube
1 small bay leaf
1 tsp Worcestershire Sauce (optional)
1 tsp Tamari Sauce or Soy Sauce (optional)

1) Brown pork (very well done, almost burnt) on both sides in large kettle.
2) Slice both onions into very thin slices and put in a bowl.
3) Scrape/clean carrots and cut into quarter inch round pieces and place in another bowl.
4) In small sauce pan put 1/3 cup water and melt boullion cube then mix in 1/2 cup pineapple juice, 1 tsp Worcestershire Sauce, and 1 tsp Tamari Sauce.
5) In kettle containing browned pork put all onion slices (separated) on top of meat then pour the contents of small sauce pan slowly over onions. Then put all carrots over of the onions.
6) Pour Pepsi Cola to depth of about 1 inch in the kettle.
7) Place bay leaf on top of all other ingredients.
8) Bring to a boil and cover kettle and lower heat to a simmer. Simmer on low for 1.5 hours.
9) Cut cabbage into small pieces (no bigger than 1 inch by 1/2 inch) and wash.
10) Extract and throw away bay leaf and fill kettle with cabbage. Return cover and cook for another hour.
11) Pour complete contents of can of diced tomatoes onto cabbage.
12) Pour rice into tomatoes and use fork to mix rice into the liquid.
13) Put top back on and cook till rice is ready (about 40 min).
